Today makes the 18th day of my 60-day juice cleanse. I'm finally free from a coated tongue, which was more coated than in other cleanses, and I'm feeling lite and energetic. I went through maybe 2 or 3 days of boredom where food sounded exciting. I didn't dare look at recipes, like I often do after 3 or so weeks of juicing, because food seemed too tempting. I felt no hunger, just the common boredom side-effect of long-term juicing.
What turned the tables for me was my free Is Juicing for Me discussion on the benefits of daily juicing, which I hold monthly at local venues like New Frontiers - San Luis Obispo, New Frontiers - Solvang, The Wellness Kitchen - Templeton, and online via teleseminar. Inspiring others to do a cleanse or add daily juice to their lifestyle really motivates me to continue on.

I'm excited to start the next 10-day group today, which includes some new folks and continuing juicers from the previous 10-day group. I have a few going to 30 and 40 days! So excited for their new sense of wellness.
The biggest reason I've doing such a lengthy cleanse this time around is due to a flare-up of Dermatomyositis. I have had one other flare-up in all of the years I've had this disease. Glad they are so few and far between because they are NO FUN.
The good news about the experience is I've fallen in love with acupuncture. In only one treatment, my severe skin symptoms were calmed, my face less red and my body relaxed. The tea concoction the practitioner provided is much less desirable though. I am one who will eat anything or do anything in the name of health. I can handle teas that other people think taste awful and I can do procedures like coffee enemas and colonics because of their benefits. This tea; however, is quite a challenge!
I'll be taking a 3 to 5-day retreat in February where I will stop juicing fresh veggies and fruits and consume water only. I will also go on a technology and speaking hiatus to go deep into meditation and healing. I'm excited and nervous.
Water fasting activates the inner healer like nothing else can. It enables cellular differentiation and assists people with autoimmune disease and even cancer by helping the body tell friend from foe. Juice cleanses do not enable the same differentiation, so I will sandwich a little water fast in between the beginning and end of my juice cleanse.

I don't know about you, but I cannot imagine eating all of these foods and this is what goes into my 2+ quarts of fresh veggie juices daily.
I'm really flying like a bird during this cleanse with really only tongue coating as a symptom and a day of tiredness in the beginning. Some cleanses have knocked me out and I felt less than optimal; while many have very mild symptoms.
I have several people I'm coaching on my juice cleanse suffering from severe detox symptoms and a few who are like me, just flying high. I love juicing!
The Scoop on Juicing
Juice cleansing is the process of drinking freshly made vegetable and/or fruit juices accompanied by herbal teas, broths, coconut water and fresh water. In drinking this nutrient-rich liquid (without the fiber) for a period of days you are, what I like to call, 'nutrificating' the body, removing toxic substances and regaining empowerment over food again. This detoxification offers incredible healing on many levels.
You might ask, "Why don't we just EAT all of the veggies instead of juicing them? Isn't the fiber good for you?"
Yes, fiber is GREAT for you. In fact most of us eating a Standard American Diet don't get enough fiber in the daily diet. Thing is, we also don't get enough NUTRIENTS in our daily 'eating' diet. Can you imagine EATING as much fresh veggies as you would be juicing?! That is several pounds of nutrient dense foods you'll be juicing and several pounds worth of nutrients going to your blood stream within 15 minutes without relying on the efficacy of your digestive system, which is often sub-par to begin with.
Aside from fiber, we also never give our digestion a rest or a cleanse. We rest our legs each evening when we put them up in the recliner. We clean our external body each day in the shower. We rest of muscles if we worked too hard. We rest and clean EVERYTHING else, but not our digestive system. I grew up in your typical Standard American Diet (SAD) home eating some of the best American comfort food and spending my allowance on junk food and sugar. It was tough to get me to eat veggies and I rarely enjoyed fruit. Even though my mother tried to limit my intake, soda was a daily beverage. I was never very active but wasn’t exactly lazy either.
In June 2003 at 23 years old, I was diagnosed with Dermatomyositis, a rare Autoimmune disease. I struggled with reaching my feet and lifting my hands above my head due to severe connective tissue inflammation. My menstrual cycle was so irregular I had even gone 70 days between cycles.
My Journey to Wellness Begins
At 5’7″, I was 175 pounds, a SAD eater and struggling to find the strength to be an active person. I enjoyed dance, hiking and the occasional yoga class but I was far from routine and needed a lifestyle change.
So I quit my corporate job, moved back home with my mom and took my savings to see a Naturopathic Doctor. He put me on several herbal concoctions and an anti-candida diet. I avoided all things packaged and processed and completely stopped ALL sugar intake, including fruit. I was overridden with Candida from the inside out. I began losing weight quickly. I maintained this system steady for 3 months until I couldn’t afford it anymore. I had rid my body of all yeast overgrowth, walked around 20 pounds lighter, and started hiking and doing yoga regularly.
Relapse and Injury Created an Opportunity to Grow
That Christmas I was in a horseback riding accident and broke my back in 4 places. I was bed ridden for several months wearing a lovely designer body brace (insert laugh here) and unable to continue my new found
physical independence. During my recovery, I began reaching for comfort foods again. Due to the lack of physical movement and the foods I began eating, I gained back the pounds and battled with the disease and Candida once more.
After a little more than a year of limited mobility, I moved to Germany and started to incorporate walking and yoga into my lifestyle again. I ate rich German food and comforts of home for the first year until I started school for Holistic Medicine. My first class was a Certificate in Nutrition,
Bodycare, and Herbalism. Then in January 2006, I did a 30 day juice fast and became vegetarian thereafter.
My First Juice Fast
During my fast, I lost more than 25 pounds and achieved a sense of empowerment over eating. Yoga was a daily routine and food became part of nutrition rather than comfort. I went raw vegan in June of that year and have made fasting and high raw eating my lifestyle ever since.
When I sway into less than healthy eating (ie. Kettle chips, cooked foods, gourmet, gluten-free breads, pastas or crackers), my body alerts me straight away. These foods are 100 times healthier than what I used to eat but they are still less than optimal for me. This doesn't mean I don't need knocked over the head with consequences from time to time, because I do occasionally indulge until my body suffers. Thing is, I now KNOW BETTER and tend to live most of my life with few symptoms and even less suffering.
In order for me to feel optimal, I need to eat a high raw, vegan and gluten-free diet and fast routinely. I cleanse every January for between 2 and 6 weeks (depending on how I feel) on fresh pressed juices and I continue juice cleansing or water fasting at smaller increments throughout the year. The longest juice cleanse I've completed lasted 58 days and the longest water fast went for 12 days. I've done as little as one day on juice or water as well.

I make water kefir using either coconut water or sweetened filtered water. Instructions say don't leave it longer than 72 hours with a suggested 24-28 hours but I'm doing an experiment and leaving it longer.
It smells a lot like alcohol or sourdough starter smells and I tasted it after nearly twice as long as recommended and it reminds me of alcohol, spritzers or kombucha. Anyone have experience consuming their kefir past 72 hours? Sauerkraut in Germany is left to ferment for years and sourdough starter is always good. It's just health bacteria for the colon but when is too long I wonder?

"Who Knew: chopping cauliflower releases enzymes that increase the bioavailability of its nutrients. Delaying cooking for 5-10 minutes after cutting helps insure that heat won’t destroy these enzymes’ effectiveness. Also, the enzymes need Vitamin C to activate, which can be accomplished with a hit of lemon or lime juice."
which activated my brain (without chopping, mind you) to elaborate upon this statement since there is so much more to consider.
How is this possible?
It’s the phytochemicals! Breaking the cells (chewing, cutting) in cabbage (other cruciferous family foods too) actually releases myrosinase, an enzyme that breaks down glucosinolates into cancer fighters and increases them by like 400%! Researchers suggest it’s the plant’s defense mechanism. Same thing with onions, we cry due to the enzyme released by the veggie once cut into. It is the glucosinolates that make the brassica family so cancer fighting. The Brassica and Allium family foods are the leaders in cancer fighting foods.
Bummer fact most people don’t consider is that heat greatly alters the structure and reduces the quantity of bioavailable phytonutrients. So the level of glucosinolates in the brassica family vary greatly depending on the method of cooking, time and temperature, veggie to water ratio and so much more. There are researchers in the UK studying how long a veggie has to sit, chopped and enzyme activity increasing, to have enough enzymes remain in tact after heating. That’s why I want to see a book which lists EACH food and the affect heat plays on it specifically; at which temperatures, by what processing, for what duration, etc. Haven’t seen one yet though so I’m left up to generalities like – Eat your veggies raw or lightly blanched!

Certified Holistic Health and Nutrition Practitioner, Stephanie Austin, was guided into holistic living in 2002 when she was diagnosed with Dermatomyositis, an uncommon autoimmune disease affecting the skin and muscle.
